Low-Carb Coconut Chocolate Chip Cookies

Sugar-free, gluten-free ketogenic chocolate chip cookies


  • 11/4 cup almond flour
  • 3 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 whole egg
  • 1/4 cup butter room temperature
  • 1/2 cup Swerve granulated sweetener
  • 1/3 cup Lily's baking chips
  • 2 tablespoons coconut oil
  • 15 drops vanilla stevia
  • Step 1 Preheat the oven to 350F and line a baking sheet with parchment paper or use a silicone baking mat
  • Step 2 Mix together all of the dry ingredients and set aside
  • Step 3 Mix all of the remaining ingredients (save the chocolate chips for last)
  • Step 4 Combine the wet and dry ingredients and mix well
  • Step 5 Add in the chocolate chips
  • Step 6 Using a moistened cookie scoop portion out 12 small cookie scoops
  • Step 7 Use your palm or a spoon to gently press down the cookie dough
  • Step 8 Bake cookies for 10-12 minutes until slightly golden around the edges
  • Step 9 Cool cookies on a cooling rack for approximately 10 minutes before serving
