For a taco Tuesday treat try this low carb Taco Salad. With only 5 net carbs and tons of taste and nutrition, this recipe is great for lunch or dinner, also reheats and travels very well. You could even make the meat and veggie mixture in a big batch and use over zucchini pasta, cabbage salad or eat it on it’s own! The sour cream and cheese adds the extra fat goodness you need on the ketogenic diet, and I would recommend adding avocado as well for extra fat! The sour cream also provides an extra boost of probiotics. Experiment with the spices to get the right amount of heat for your tastes – I like mine SPICY. The two teaspoons of Chili Powder wasn’t enough for me, so I added another teaspoon of Cayenne Pepper. Enjoy this low carb treat with a low carb margarita!

Ingredients
  • 2 cloves minced garlic
  • 1/2 teaspoon onion powder
  • 2 teaspoons chili powder
  • 1 diced yellow onion
  • 2 diced bell peppers
  • 1/2 cup diced tomatoes (with liquid)
  • 2 cups shredded cabbage white and purple finely shredded
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1.25 pounds ground turkey or beef
  • 1/3 cup italian parsley
  • 1 can diced green chilies
  • 1 cup sliced jalapeños for garnish
Directions
  • Step 1 Chop and prep all ingredients
  • Step 2 Saute garlic, onion, and peppers in oil for approximately 5 minutes (until tender)
  • Step 3 Add spices and stir to combine
  • Step 4 Add ground meat and break apart and cook and combine with veggies and spices
  • Step 5 Add tomatoes and green chilies
  • Step 6 Stir frequently and simmer until meat is cooked and all ingredients are well combined (5-10 minutes)
  • Step 7 Divide cabbage as the base among serving dishes
  • Step 8 Tope with meat and veggie taco mixture
  • Step 9 Top with cheese and sour cream and garnish with the parsley and jalapeños
  • Step 10 If you are prepping this ahead of time keep the cabbage and garnish separated from the taco mix until serving
