There are dozens of gluten-free, low-carb pizza recipes out there. I was looking to create something a bit different but still in the “pizza” family. So I took a shot at the calzone pie! This came out so delicious that the keto calzone is in heavy rotation on the Ketogenic Kitchen menu. This reheats well and is great for a weekday work lunch. No obscure ingredients here and it’s fairly simple to make. There are so many options for fillings too. You can try pepperoni and cheese, pesto, ham and cheese, meatball, vegetarian..the possibilities are endless. Give this a shot and let me know what you think!

Ingredients
  • 8 ounces shredded parmesan or mozzarella Any combination of shredded cheeses will work here
  • 2 ounces cream cheese
  • 2 whole eggs Room temperature
  • 1/3 cup almond four
  • 1/3 cup coconut flour
  • 1/3 cup golden flaxseed
  • 3 slices provolone cheese
  • 1 cup ricotta cheese
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon italian seasoning
  • 4 ounces sliced mozzarella
  • 1 tablespoon shredded fresh basil
  • 1 tablespoon fresh italian parsley

Instructions
  1. Preheat oven to 375 degrees
  2. Melt the shredded cheese and cream cheese on low in a saucepan until cheeses combine
  3. Mix in one egg and the flour mixture (almond flour, coconut flour and flaxseed)
  4. Thoroughly combine the ingredients above either by hand or in a food processor (with the dough blade attachment)
  5. Place the dough into a pie pan and spread it thinly across the bottom with thicker quantities along the sides to work with after filling
  6. Place the provolone slices along the bottom
  7. Mix the ricotta, salt, remaining egg, basil and Italian seasonings
  8. Layer the mixture over the sliced provolone
  9. Pull the remaining dough from the sides over the cheese mixture (it may be easier to remove the extra dough, roll it out and layer on top of the pie. Experiment here and find a method that has a desired look for you.
  10. Sprinkle some of the fresh parsley on top and place in the preheated oven for 20-30 minutes
  11. Cool pie for 5 minutes and then slice and serve
