Spiralized zucchini has unlimited options! You must get the Paderno Spiralizer and start experimenting with this amazing kitchen tool. One of my favorite uses for it is zucchini noodles with meat sauce. This is a super tasty and healthy Italian dish that is easy, low carb and can be modified many different ways. Try it with a low carb tomato sauce, pesto, a keto alfredo sauce, or maybe with a simple garlic butter sauce. SO SO GOOD. Kids would absolutely love the noodles too, and would probably be highly interested in helping make them (it is so fun!). If you don’t have the spiralizer yet you can make wider pappardelle-like noodles with a potato peeler. Just cut a lengthwise slice on the bottom of the zucchini to give it a flat stable base to rest on while you peel the “noodles” off with the potato peeler.

Instructions
  1. Spiralize zucchini and set aside
  2. Dice onions and brown with ground beef in the butter
  3. Chop mushrooms coarsely and sauté until tender with onion and beef
  4. Add basil and tomato sauce
  5. Cover and simmer on low heat for 20 minutes
  6. In a separate pot lightly sauté noodles in butter until al dente (do not overcook or they will become very watery and limp)
  7. Serve the meat sauce over the zucchini noodles and top with parmesan cheese
